What’s on the Menu: Pieology Pizzeria

ST. GEORGE — “What’s on the Menu” host Sheldon Demke has a pretty fantastic job – visiting great restaurants with fun people. In this week’s episode, he took social media influencer Alisa Ence to try some delicious custom eats at Pieology Pizzeria in St. George.

At Pieology, you get exactly what you want. Their approach is unique among pizzerias in that customers are able to build and personalize their own pizzas, from crust to sauce to toppings. And there are plenty of vegetarian and vegan-friendly options.

“Anything that your diet needs, we pretty much have it,” said Todd Jex, area manager for Pieology.

Pieology also offers salads, sides and sweets, so Demke made sure to introduce his special guest to the wonder that is the cinnamon churro dessert pizza.

Ence had never visited Pieology before, but it didn’t take her long to figure out what she wanted for her first pizza. Gluten-free crust coated with olive oil, barbecue sauce and mozzarella cheese topped off with red onions, spinach and high-quality grilled chicken.

I think it’s so cool that you can come in and custom-build your pizza,” she said. “I tried the cauliflower crust, which was incredible.”

Demke, on the other hand, has already sampled almost everything Pieology has to offer. But he still found something new to explore with one of their signature pizzas. The “ABC” features Alfredo sauce, bacon and chicken on a pie-rise thick crust with mozzarella cheese, spinach and mushrooms.

“Pieology is such a great spot, and I’ll tell you why,” he said. “Choices, fresh toppings – and lots of them – with whatever crust you want.”
